Best Easy and Quick Malai Kulfi Recipe – 30 Min

Malai Kulfi is a traditional Indian frozen dessert made from milk, sugar, and a mixture of spices and nuts. It has a creamy, rich texture and a unique flavor that is hard to resist.

Kulfi is believed to have originated in the Mughal Empire, where it was served as a refreshing treat to the royal court. It was made by simmering milk for hours on low heat until it reduced to a thick, creamy consistency. This process, called “bhapa”, creates the dense and creamy texture of kulfi.

Malai Kulfi, in particular, is made with a mixture of full-fat milk, cream, and a variety of aromatic spices like cardamom, saffron, and pistachios. The addition of cream gives the kulfi a rich, velvety texture and a rich, indulgent flavor.

To make Malai Kulfi at home, you will need:

  • 2 liters of full-fat milk
  • 1 cup of heavy cream
  • 1 cup of sugar
  • 1 tsp of cardamom powder
  • A pinch of saffron
  • 1/2 cup of chopped pistachios (optional)

To begin, heat the milk in a large saucepan over medium heat until it comes to a boil. Reduce the heat to low and simmer for about 2 hours, stirring frequently to prevent the milk from sticking to the bottom of the pan. As the milk simmers, it will reduce in volume and thicken.

Once the milk has reduced to about half its original volume, add the cream and sugar to the pan and continue to simmer for another 30 minutes. Add the cardamom and saffron and stir well. If you are using pistachios, add them at this stage as well.

Once the mixture has thickened to a creamy consistency, remove the pan from the heat and let it cool to room temperature. Pour the mixture into individual kulfi molds or small cups and freeze for at least 4 hours, or until solid.

To serve, remove the kulfi from the freezer and let it sit at room temperature for about 10 minutes to soften slightly. Then, use a sharp knife to gently loosen the edges of the kulfi and turn it out onto a plate. Garnish with chopped nuts or a sprinkle of saffron, if desired, and serve immediately.

Malai Kulfi is a delicious and refreshing dessert that is perfect for any occasion. Its creamy, rich flavor and aromatic spices make it a real treat for the senses. Whether you serve it as a dessert after a traditional Indian meal or as a refreshing treat on a hot summer day, Malai Kulfi is sure to be a hit with everyone.
