  • 250 gms package of macaroni noodles
  • 1/4 cup minced onion
  • 1/4 cup diced celery
  • 1/3 cup diced green, red, or yellow pepper (or any combination!)
  • 1/4 cup diced cucumber
  • 4 tablespoons diced pickle (dill, relish, sweet….whatever!)
  • 1/4 cup olive oil
  • 1/4 cup vinegar (red wine or white)
  • 2 teaspoons mustard (yellow, dijon, honey, wholegrain….whatever!)
