  • 2 cups boiled potatoes, mashed tikki
  • 1 cup yogurt
  • 2 tablespoons chopped coriander leaves
  • 2 tablespoons chaat masala
  • 2 tablespoons tamarind chutney
  • 2 tablespoons green chutney
  • Red chilli powder (to taste)
  • Salt (to taste)
  • Sev (for topping)

Ingredients For Ragda

• 2 cups white vatana
• 2 tablespoons oil
• 1 teaspoon turmeric powder
• 2 tablespoons coriander powder (Optional)
• 2 tablespoons red chilli powder (Optional)
• 3 cups water
• 2 tablespoons lemon juice (Optional)
• Salt (to taste)

Instructions To Samosas

  1. To make the samosas, mix together the flour, oil, carom seeds and salt in a large bowl.
  2. Add enough water to make a stiff dough. Knead the dough for 5-7 minutes and then cover it with a damp cloth and let it rest for 30 minutes.
  3. For the filling, heat the oil in a pan over medium heat. Add the cumin seeds and cook for a few seconds.
  4. Add the ginger paste and sauté for a few seconds.
  5. Add the coriander powder, red chilli powder, garam masala, mashed potatoes, green peas and salt. Mix well and cook for 5-7 minutes. Remove from heat and set aside to cool.
  6. Divide the dough into 12 equal portions. Roll each portion into a thin circle.
  7. Place a tablespoon of the filling in the centre of each circle and fold the circle into a semi-circle and pinch the edges to seal.
  8. Heat enough oil in a deep pan for deep-frying. Fry the samosas until golden brown.

  1. Heat a teaspoon of oil in a pan over medium heat.
  2. Add the mashed potatoes and fry for 2-3 minutes.
  3. Add the chaat masala, salt and red chilli powder and mix well.
  4. Shape the mixture into small tikkis and fry until golden brown.

  1. Soak the white vatana overnight in enough water.
  2. Drain the water and transfer the vatana to a pressure cooker.
  3. Add the turmeric powder, coriander powder, red chilli powder, water, lemon juice and salt and mix well.
  4. Pressure cook for 3-4 whistles.
  5. Open the lid of the pressure cooker and mash the mixture.
